Dutch ovens are perfect for cooking chicken, and other dishes, because they cooked very evenly and slow and low.

This savory dish features a rich onion and tomato-based sauce with fragrant seasonings and spices like ginger, cumin, turmeric, coriander, and cinnamon. And it wouldn’t be chicken curry without tender and juicy stewed chicken breasts or thighs.

How to Make Chicken Curry in Dutch Oven | How Do You Make a Simple Chicken Curry?

Here’s how to make the perfect chicken curry in a Dutch oven! It only takes about 30 minutes and it’s easy to put together.

Ingredients

  • 1 ½ lbs chicken thighs, boneless and skinless

  • Salt and pepper

  • 2 tbsp canola oil (or another neutral oil)

  • 1 large yellow onion, chopped

  • 2 carrots, diced

  • 1 tbsp garlic, minced

  • 1 tbsp ground ginger

  • 1 tbsp curry powder

  • 1 can petite diced tomatoes

  • 1 cup chicken broth

  • ½ cup heavy cream

  • Cilantro for garnish

Directions

  1. HEAT your Dutch oven over medium-high heat and ADD your oil.

  2. SEASON your chicken thighs with salt and pepper to taste. PLACE the chicken into the Dutch oven. COOK for about 3 minutes then TURN. COOK until the thighs are lightly browned and REMOVE.

  3. ADD the onion and cook for 3-4 minutes. Then ADD the diced carrots and cook for additional 3 minutes, until lightly browned. ADD your garlic, curry powder, and ginger, and STIR for 15 seconds. ADD the tomatoes, chicken broth, and cream.

  4. RETURN the chicken thighs to the Dutch oven and bring to a boil. REDUCE heat and simmer for 25 minutes. After 25 minutes CHECK the chicken thighs to ensure they’re cooked through.

  5. SERVE with rice and cilantro, and enjoy!
