There are several different brands of almond flour, but for this recipe I used this brand. Almond flour is primarily made of almonds, which makes it lower in carbohydrates than wheat based flour, but almond flour, just like almonds has a higher fat content. Although it is a good fat, keep in mind that higher fat also means higher calories. With anything though, balance is key!
Almond flour can be a bit pricey compared to wheat flour. That’s because, again, almonds are used and they’re expensive nuts. But the good thing is that a small amount of almond flour goes a long way.
Something also great about almond flour is that you can actually make your own if you want! If you don’t like the price tag, all you need is some almonds and a great blender and you have your own manufactured almond flour. It can even be stored for future use.
Almond flour has great health and nutrient benefits. It reduces your bad cholesterol and has positive impacts on insulin levels.
It’s a staple in gluten free and keto diets.
Almond flour and almond meal are often used interchangeably. However, almond flour is more finely ground in texture and is usually referred to as “blanched”. For this recipe you’ll want to use the blanched almond flour.

Chocolate. The recipe calls for chocolate chips. However you can use dark chocolate too, which is known to have health benefits.
Coconut sugar. I love using brown sugar, but you can also easily find a brown sugar substitute if you want a healthier option - coconut sugar!

This almond flour cookie recipe already has a good vegan base, but there are a few alternatives you can choose to make sure it’s all vegan!
Vegan chocolate chips. Sometimes I chose to do a vegan version of this cookie recipe, and when I do I use this brand of vegan chocolate chips.
Flaxseed “egg”. It’s so easy to make your own flaxseed “egg” mixture to act as a binder these almond flour chocolate chip cookies. All you need is one tablespoon of ground flaxseed and three tablespoons of water. You mix them together and let it sit in your refrigerator for 15-20 minutes to firm up, then you have your flaxseed egg!
Coconut oil. I love using coconut oil in place of just about anything that calls for butter when I can. You can get an unrefined coconut oil to use for all kinds of almond flour cookies here. It tastes amazing, plus there are other benefits to coconut oil. You can eat it, but it’s also great for your hair, skin, and nails too!
Coconut sugar. Some of the processing that goes into making brown sugar isn’t conducive to a vegan diet. Coconut sugar is the perfect 1 to 1 substitute and when I use it for my almond flour cookies I use this brand.
